ZESTY POTATO SALAD

Prep Time: 15 minutes
Cook time: 10 minutes

  Ingredients:

  • 2 pounds red potatoes, cut into small cubes
  • 1 cup Horseradish Mayonnaise
  • 2 tablespoons vinegar
  • 1 cup sliced celery
  • 1 cup halved green beans
  • ½ cup thinly sliced yellow or red bell pepper
  • ½ cup Crispy Fried Onions
  • Salt and Pepper to taste

    1. Place Potatoes in a large saucepan. Cover with water. Boil for 10 to 12 minutes until tender; drain well. Transfer to bowl; cool.
    2. Add remaining ingredients to large bowl. Toss until potatoes are well coated. Cover and chill to blend flavors.

    Makes 6 servings.
